EASTER cupcakes are here at last!  I never had this kind of dessert at Easter. All I received as a kid was weird candy and those deviled eggs. Yuck.

These adorable cupcakes were actually made for a Navy bake sale only to be licked, smashed, and semi-eaten by 5 year olds.

Their parents will pay for it later when the sugar reaches new heights, and the kids will be jumping off the ceiling.

The cupcakes are Pink Velvet with buttercream frosting and fondant decorations. As usual, I only use Fondarific Fondant!

When covering the entire cupcake with fondant, I put a layer (not too much) of icing on top of the cupcake and then I place the fondant. It makes a nice hold, and I think it tastes better.

Peter Cottontail is trying to find carrots in Mr. McGregor’s garden. He left his jacket at home so he should be okay.

EASTER CUPCAKES

Ingredients

    CUPCAKES:
  • Supreme Duncan Hines Cake Mix Pink Velvet
  • 1 cup of plain Greek yogurt
  • 1 small box of JELL-O dry vanilla pudding mix
  • 1/2 cup of H20
  • 1/3 Vegetable oil
    FROSTING:
  • 4 1/2 cups of powdered sugar ( I prefer C & H. It’s the best)
  • 2 tablespoons of milk
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of vanilla
  • 1 cup unsalted butter, softened
    FONDANT:
  • Fondarific fondant Wedding White Fondant
  • Metal Cut-out Hearts, circles, flowers
  • BIG piping bag
  • Wilton Tip
  • Green, pink, black, blue, food coloring
  • Gloves (food grade)
  • Rolling pin (small will work)

Instructions

    CUPCAKES:
  • Use a mixer to mix all the ingredients together. I love my Kitchen-Aid.
  • Pour the batter into your cupcake paper cups
  • Bake just _UNDER_the cook time. You want moist cupcakes, don't you, Darling?
  • Cool them a bit and stick them into the freezer.
    FROSTING:
  • Mix ingredients with your mixer.
  • Use my baking trick to fill your piping bag
  • Pipe
  • Put them in the freezer to keep them moist until your gala
    FONDANT:
  • Put your fondant pieces in the refrigerator to set a bit
  • CONSUMING
  • When you are ready to partake in the goods, set your pieces on the cupcakes.
  • *Make sure your frosting is a bit soft when putting on your fondant.

      Thank you. I love these cupcakes. I do not like the taste of fondant either. =/
      I did find some fondant that tastes good. It’s from Fondarific — cinnamon flavor.
      Fondarific makes a Wedding White flavor which is not bad.

      My friend made my wedding cake with Fondarific. It tasted really good and received so many compliments.

      Thank you. I love baking. My husband works out and tries to eat sensibly, but I keep baking. hahaha. I have to give my baked goods away or he would eat them all.

      I will definitely take a picture of the bathroom before and the bathroom after. That is my next project. I love fixing up the house. I have three more rooms to go!
