I made these cream cheese molasses muffins for a wake. The muffins brought the mourners out of mourning, gave them a sugar rush, and laughter and joy ensued shortly thereafter.

I am changing lives — one muffin at a time…or one wake at a time.

Why do they say, “You’re as slow as molasses?” Have you ever poured molasses out of the jar? You can paint your two-story house, visit your boyfriend in jail, fly to Paris, and still not have all that molasses poured out yet.

I know. The batter looked like something my dogs did in the backyard, but they baked well and are worth the first mustering through the first stage.

After the first/awkward stage, this dessert can be eaten during the morning, noon, and night. Tasty treats made out of whole wheat, spices, and applesauce.

Who wants dry muffins? Pull them out of the oven a tad early, punch a hole in them, stuff them with cream cheese, and then put them in the freezer for a bit.

Make sure you cover them or knit tiny sweaters to keep them warm or Child Services may end up on your front porch.

The paper holders are made of a heartier stock and much deeper than the regular flimsy “Made in Laos” papers.

They were bit more expensive, but robbing that bank to make sure the muffins were cradled in strength and style was worth it!

I know they “look” like cupcakes, but they are not. Do not sully my cream cheese molasses muffins! They are very sensitive, fragile, and will melt if handled too roughly.

Seriously, you can’t leave them in the sun. They will melt. It’s cream cheese, people!

Yield: 11 Muffins

Calories per serving: YES!!!!


  • 1 CUP of Organic Wheat Bran
  • 1/2 CUP of Organic Whole Wheat Flour
  • 1 TSP of Baking Powder
  • 1 TSP of Baking Soda
  • 1 CUP of Organic Milk
  • 1/2 CUP Molasses OR Honey
  • 3/4 CUP of Organic Applesauce
  • 2 TBSP of Vegetable Oil
  • 2 Organic Eggs
  • 1 TSP of Organic Nutmeg
  • 1 TSP of Organic Ground Clover
  • 4 CUPS of Organic Sugar
  • 1 TSP of Vanilla
  • 1 TSP of Sea Salt.
  • 3 TBSP of Organic Milk
  • 8 OUNCES of Organic Cream Cheese
  • 1/2 TSP of Nutmeg


  • Mix all dry ingredients
  • Mix all wet ingredients
  • Incorporate dry and wet ingredients in blender
  • Pour half way in tall, sturdy cupcake paper holders
  • BAKE at 325˚ for 30 minutes -- check early -- DO NOT OVER BAKE
  • Let cool
  • Punch holes in the middle of muffins using a cupcake hole corer
  • Blend all ingredients
  • If too runny, add more powdered sugar
  • You want a stiff icing
  • Put a bit of pure cream cheese in the middle
  • Pipe your frosting
  • Sprinkle Nutmeg on top
  • Put in freezer
